Tulalip Resort Casino: Talking Turkey for Thanksgiving

The Culinary Team is Whipping Up Thanksgiving Madness Throughout The Resort

Tulalip, Washington — Thanksgiving Day celebrations are abundant this year for the whole family at Tulalip Resort Casino. The esteemed culinary team at Tulalip are whipping up turkey madness for November 24. Below are highlights of the featured feasts from around the Resort, such as relaxed-casual and modern-sophisticated dining. There’s even a traditional buffet experience to enjoy. This year, there’s something for everyone.

Modern-Sophisticated Dining

Tulalip Bay Chef/GM Jeremy Taisey’s Thanksgiving Day specials include Slow Roasted Turkey Roulade with wild boar bacon and maple vinaigrette and Sage Cured Confit of Turkey Leg served with cranberry, Cointreau preserves, and crispy skin. Both dishes are served with homemade focaccia, hazelnut and porcini stuffing, sous vide endive with wild mushroom and butternut squash puree, and a pumpkin spiced marshmallow toadstool. For those looking for something other than Turkey, Chef Jeremy will also be preparing dishes from the regular menu.

To enjoy alongside this flavorful turkey dinner, Sommelier Tommy Thompson has selected a Duet of Wine Pairing for $18, which includes a 2012 Domaine Philippe Alliet, Chinon ‘Côteaux de Noiré’ Cabernet Franc and a 2015 Domaine Huet, Vouvray Clos du Bourg Moelleux Première Trie from France’s Loire Valley.

Blackfish is offering up a special Thanksgiving dinner special of Apple Smoked Roast Turkey with hazelnut-sausage stuffing, roasted root vegetables, cranberry relish with port & figs, havarti mashed potatoes, and cider gravy. It will be paired alongside Chef David Buchanan’s seafood centric menu, which pays tribute to regional Northwest ingredients and Tulalip tradition. For dessert, a special Pumpkin Flan for $8 was added to the sweet line-up.

The Wine Spectator award-winning wine list, visionary cocktails, and microbrews fill out the experience at Blackfish.

Casual Dining

The Draft Sports Grill and Bar is serving up a classic dinner special of Smoked Turkey Pot Pie with a sweet potato biscuit top and cranberry apple salad for $15. Missing Grandma’s Turkey Dinner? Cedars Cafe Chef Brent Clarkson is offering up his Grandmother’s Turkey recipe for all to enjoy. Guests can partake in Roasted Turkey carved to order with Champagne cranberry sauce, scratch-made sage andouille stuffing, and a vegetable medley. Dinner comes with a choice of soup or house salad; also includes garlic mashed potatoes with giblet gravy, and/or baked sweet potatoes with butter and brown sugar for $18.95 per person plus sales tax and gratuity.

If turkey is not your thing, try Clarkson’s Slow Roasted Prime Rib, which is hand-rubbed with Cedar’s special blend of seasonings and slowly roasted to perfection. It is served with natural au jus and ranch style horseradish cream. This dish comes with a choice of soup or house salad; and garlic mashed potatoes, baked potato, or rice pilaf. Ordering options include a 12 ounce cut for $24, or a 16 ounce cut for $28, plus tax and gratuity.

Add a sweet finish to the holiday meal by savoring one of Pastry Chef Nikol Nakamura’s House-made Pumpkin Pie Tart. The individual tarts come with cinnamon whipped cream and candied pecans for $6.

Tulalip, Washington — Tulalip Resort Casino’s Sommelier Tom Thompson is extending a generous invitation to all wine lovers and holiday gift givers to the Resort’s annual Taste of Tulalip Holiday Wine Sale. The sale will feature over 130 bottles of wine from around the globe, and will run from Monday, November 21 through Wednesday, November 23 from 4 p.m. – 9 p.m. each day. During the sale, guests can sample a selection of wines they might not have otherwise ever tried…and can purchase it on the spot!

“It’s time to make room in our cellar, and what better way to do that than to share some of our good juice inventory with our loyal wine drinkers for the holidays?” asks Sommelier Tom Thompson. “Nothing pairs better with the holidays than a delicious bottle of wine. We all know that a great bottle of wine can really help turn up the merrymaking at any family gathering or party.”

and benefit Northshore School Foundation

 

Woodinville, Wash. October 21, 2016 – Woodinville Wine Country, just 30 minutes east of Seattle and home to more than 100 wineries, announces the second annual WineCraft: Harvest Wine Auction on Sunday, November 6, from 1 p.m. to 4 p.m. at Columbia Winery. Wine enthusiasts and guests are invited to experience top-tier wines by Woodinville’s most prominent winemakers while enjoying live music and signature bites by The Barking Frog at Willows Lodge, The Commons, and Oil & Vinegar.

A “Raise the Paddle” auction will feature specialty reserve, new blends and limited- release wines as well as curated and personalized wine tasting and blending experiences from more than 20 wineries including Baer Winery, EFESTE, Chateau Ste. Michelle, J. Bookwalter, Lauren Ashton Cellars, Patterson Cellars and Gorman Winery.

Proceeds from the auction will benefit the Northshore Schools Foundation and its mission to support academic success for all Northshore students by funding academic programs.

Matthews Winery: Farm to Table Dinner Series

Matthews Winery and Creekside Farm are excited to invite you to this season’s 2016 Farm-to-Table Dinner Series.

As many of you may have read, we’ve recently started a vegetable and flower farm on our property in Woodinville, called Creekside Farm. We’re pleased to announce that we’ve lined up three incredible chefs to cook a seasonal meal in our newly renovated tasting room and event space.

Each dinner will feature a local chef from some of the most renowned restaurants in the Puget Sound region using produce from our very own Creekside Farm. All dinners begin at 6pm, and will include a farm tour with passed appetizers, a multi-course family-style meal and several wine pairings with all the courses. Price: $95/person plus tax and each dinner is limited to only 40 people per evening.

Tickets for the dinners are now available! As a Matthews Mailing List member, you now have access to purchase tickets to any of these evenings. The remaining tickets will be made available beginning on Thursday morning to the general public members on a first-come, first-served basis.  For each dinner, you may purchase up to 4 tickets.

August 18th – Chef JJ Proville of L’Oursin(opening Fall 2016)

To say we are excited about L’oursin’s launch this coming Fall in Seattle is an understatement. As one of the founding members of Creekside Farm, JJ is known for cooking with a delicate hand, always working with seasonal ingredients using a unique spin on classical French cooking techniques. This meal is sure to set the bar for the rest of the evenings to come.

September 22nd – Chef Logan Cox of Sitka & Spruce

Logan only had one requirement: “I want to cook the entire meal over an open flame.”, he said. And what Logan wants, Logan gets. As head of one of our favorite restaurants in Seattle, we’re excited to see what he will do with all the fresh September produce coming from the farm. Now, we need to get back to building our fire pit for him to cook over.

October 13th – Chefs Bobby Moore & Chris Smith of Barking Frog

Barking Frog is the closest restaurant to Creekside Farm, and Bobby Moore has been intimately involved this year, sourcing produce for use in his Woodinville restaurant. We’re excited to have him out of the restaurant and cooking for us during this intimate evening.

On Friday August 19th 6:30pm at Columbia Winery we are hosting a winemakers dinner called “Cheers to a Cure” which is part of the Auction of WA Wines Winemaker Dinner Series.
We are thrilled that Chef John Howie of Seastar and John Howie Steak will be catering our event as well as cooking LIVE at one of the food and wine pairing stations.

Matthews Winery: A Remodel and CSA Program

If you have not visited Matthews Winery recently you may be in for a surprise the next time you stop by. They have gone through a remodel and have added a CSA garden. I was lucky to stop in on the first day of the Creekside Farm pick up.

In 2015, the Matthews team planted Creekside Farm at Matthews Winery, an ecological produce garden adjacent to the winery building under the direction of Alex Meizlish, a noted Woodinville farmer. This was the first commercial garden associated with a winery property in Woodinville.  The name Creekside is inspired by a small, picturesque creek running along the edge of the farm area.

Creekside Farm also has partnered with several nearby businesses to create a community supported agriculture (CSA) subscription program that is unique to Woodinville Wine Country.

The CSA program runs through late October, subscribers receive a custom box of fresh produce and flowers from Creekside Farm; custom breads from The Commons, a nearby bakery; custom cheese and dairy products from Cherry Valley Dairy in Duvall; locally grown eggs and honey; and hand-selected wines from the current and library vintages of Matthews’ wines.

CSA members also will have first access to several unique farm-to-table dinners throughout the year at Matthews.

You can taste the fromage blanc cheese and herbed butter from Duvall’s Cherry Valley Dairy and fresh bread from The Commons and they pair very well with Matthews wines. They have plans to add more locally sourced products such as artisan meats and cheeses, enabling guests to enjoy small plates with their wine tastings.

You won’t recognize the old tasting room and wine production area when you walk in. It’s bright and light with white walls that remind you of a French farm house. There are plenty of tables and a inviting tasting bar. There is also outdoor seating with umbrellas and some propane patio heaters are a welcome addition for guests – rain or shine.
