Project V Distillery: More Vodka to Woodinville

by Shona Milne on October 29, 2010

I found out that Project V Distillery & Sausage Company will have their Grand Opening on November 13th. Right now they will be producing Washington wheat vodka called Single Silo Vodka. They work with a farmer in Eastern Washington who has a single silo of wheat just for them. Project V started in 2008 and I spoke with Mac who is one of the four primary owners. Their goal is to make hand crafted products as simply as possible. They do have plans for whiskey, gin, and maybe a by-product of pressed grapes. As for the sausage, that may be some time. The plan is to use the wheat byproducts left over from the distilling to use as feed for pigs and then the pigs eventually end up as sausages, but this is a longer term project. I did get a lesson in distilling how the mash is made and how the distilling to done through the copper pipes. It is continually recirculated from liquid to vapor by heating and eventually it becomes vodka.

As a resident of Woodinville it’s comforting to know that another ‘Hometown’ business is opening up. I wish Project V Distillery and Sausage company much luck in their new endeavor! I’ll be there on the 13th and I’ll be telling all of my friends.

Great group of people and they make a great product! I accidentally stumbled upon them while sampling wine during St. Nicks, and Project V was the highlight of the day.

The loveliest vodka I have ever tasted. Smooth, silky with vanilla overtones. Worth every penny.
