I attended a Fidelitas winemaker dinner at Russell’s Dining in Bothell in last week. It was a great night of wonderful food and wine with about 30 other people. Winemaker Charlie Hoppes talked to us about Fidelitas wines. This is the tenth year for Fidelitas and they make 13 wines, two of which are white. When starting his winery he thought that Hoppes did not make a good winery name so he took a family name and combined it with the Latin word for Fidelity. Fidelitas is a family owned winery on Red Mountain. Be sure to check with Russell’s to find out about upcoming winemaker dinners. Wines could be ordered at the dinner through Village Wines for pickup later. Our food and wine paired menu is below.
Wild Mushroom Bisque ~ Seared Halibut Cheek ~ Duck Confit Risotto Cake ~ Spring Rack of Lamb ~ Warm Dark Chocolate Torte 2006 Fidelitas Merlot ~ 2007 Fidelitas Semillon ~ 2006 Fidelitas Cabernet Sauvignon ~ 2006 Fidelitas Optu ~ 2006 Fidelitas Champoux Cabernet Sauvignon
